1 onion\cooked, chopped
1 large carrot\cooked, grated
7 ounces snow peas\cooked, with ends trimmed
1 piece of cucumber, 2 inch, chopped
2 Tbs. soy sauce
2 tsp. lemon juice
1/2 tsp. sugar
salt and pepper
1/4 lb. bean sprouts

Heat oil in a large shallow pan. Add the onion, carrot, and snow peas and fry for 1-2 minutes. Add the cucumber and cook for an additional minute. Stir in the soy sauce, lemon juice, sugar, and salt and pepper to taste, and bean sprouts. Cook for 1-2 minutes and serve immediately. Serve with curly endive leaves if desired.

Chinese Tofu Stir-Fry

1 Tbs. plus 1 tsp. oil
1 clove garlic, crushed
13 ounces firm tofu, drained and cut into 3/4 inch cubes
4 shallots or green onions, chopped
1/4 Chinese cabbage, shredded
1 red bell pepper\cooked, thinly sliced
1 tomato\cooked, diced
1 Tbs. plus 1 tsp. soy sauce
1/4 cup Hoisin sauce
1/3 cup plus 3 Tbs. fresh bean sprouts

Heat oil in a frying pan over a moderate to high heat. Sauté garlic; add tofu and cook for about 5 minutes, or until crispy. Add shallots or green onion, cabbage, red bell pepper, and tomato to pan; cook 3-4 minutes over high heat. Stir in soy sauce and Hoisin sauce. Top with fresh bean sprouts and serve with rice.

Chinese-Style Spareribs

2 Tbs. plus 2 tsp. Hoisin sauce
2 Tbs. plus 2 tsp. water
2 Tbs. dry sherry
1 Tbs. plus 1 tsp. honey
1 Tbs. plus 1 tsp. soy sauce
2 cloves garlic, minced
2-3/4 lbs. pork spareribs, cut into serving size portions

Place a large plastic bag in a large bowl. Combine all ingredients, except ribs, in bag and mix well. Add ribs and close bag tightly. Marinate in refrigerator 6 hours or overnight. Turn bag several times to distribute marinade.

Preheat oven to 350°F. Drain ribs, reserving marinade. Place ribs in a shallow roasting pan. Cover with foil and bake 1-1/2 hours. Uncover and brush ribs with reserved marinade. Bake, uncovered, 30 minutes or until cooked throughout.
